  • 1 Whole chicken
  • 3 tbsp grapeseed oil
  • 6 tbsp unsalted butter
  • 3 tbsp all-purpose seasoning
  • 1½ tbsp black pepper
  • 2 tbsp smoked paprika
  • 4 thyme sprigs
  • 5 garlic cloves (smashed)
  • 1 onion (sliced into medallions)

Instructions

  1. Preheat your oven to 375°F (190°C). Clean and pat dry the chicken.
  2. Using kitchen shears, cut along both sides of the backbone to remove it.
  3. Press down firmly on both sides of the chicken until it flattens.
  4. Drizzle grapeseed oil and sprinkle seasoning inside; massage well.
  5. Flip the chicken over, repeat with more oil and seasoning on top.
  6. Gently separate the skin from the breasts; insert butter underneath.
  7. Sprinkle thyme over the chicken and place sliced onions in a cast iron skillet as a bed for roasting.
  8. Position the chicken breast-side up on the onions. Bake for about 1 hour and 15 minutes, basting every 15 minutes for optimal flavor.
