  • 1/2 cup oil-packed sun-dried tomatoes (slivered)
  • 1/2 cup onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 cup low-sodium vegetable or chicken stock
  • 1/2 cup sour cream
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon unsalted butter
  • Red pepper flakes, salt, and black pepper to taste

Instructions

  1. Cook the whole-wheat spaghetti according to package instructions in salted boiling water until al dente. Drain, reserving about 1 cup of pasta water.
  2. In a skillet, heat the oil from the sun-dried tomatoes along with butter over medium heat. Sauté the sliced onion until translucent, then add minced garlic until fragrant.
