  • ½ cup frozen spinach (thawed and drained)
  • 4 salmon fillets (6 ounces each, skin on)
  • 3 tablespoons olive oil (divided)
  • 1 teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons butter
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cream cheese, mozzarella, parmesan, spinach, garlic powder, and red pepper flakes until smooth.
  3. Place salmon fillets skin-side down on a baking sheet. Carefully cut a pocket into each fillet without cutting through.
  4. Season the fillets with salt and pepper; fill each pocket with the creamy mixture.
  5. Drizzle olive oil over the stuffed salmon and add small pieces of butter on top.
  6. Bake for approximately 12 minutes or until the salmon is cooked through.
