  • 1 cup white or brown rice
  • 2 cups water
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • Sour cream and salsa for serving (optional)

Instructions

  1. Marinate the steak by mixing olive oil, garlic, cumin, chili powder, salt, and pepper. Rub over the flank steak and let it sit for at least 30 minutes.
  2. Cook rice according to package instructions.
  3. Grill the marinated steak over medium-high heat for about 4-5 minutes per side until done. Let it rest before slicing.
