  • 450g flank or sirloin steak
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1½ cups whole milk
  • ½ tsp ground cumin
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 cups broth or water
  • Salt, as needed
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 tsp garlic powder
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Pat the steak dry and season with spices. Heat olive oil in a skillet and sear the steak for 4–5 minutes per side until cooked to your liking.
  2. Remove the steak and let it rest while you cook the rice in broth or water with garlic powder.
  3. In the same skillet, melt butter and sauté garlic. Add milk gradually and stir in cheeses until smooth for the queso sauce.
  4. Serve the fluffy rice topped with sliced steak and warm queso sauce. Garnish with fresh cilantro, lime wedges, avocado slices, and jalapeños.
