  • 2.5 lbs boneless chicken thighs or breasts
  • 1 (15-ounce) can pineapple slices in 100% pineapple juice, juice separated from slices
  • ½ cup packed dark brown sugar
  • ¼ cup sparkling grape juice vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon unsulphered molasses
  • 1 tablespoon Worcestershire sauce
  • Kosher salt & freshly ground black pepper, to taste
  • 1 teaspoon ground allspice
  • 2 tablespoons cornstarch mixed with water

Instructions

  1. Preheat your oven to 325°F and spray a baking dish with nonstick spray.
  2. Arrange the chicken in the dish and nestle pineapple slices between them.
  3. In a saucepan, combine pineapple juice, brown sugar, vinegar, mustard, molasses, Worcestershire sauce, salt/pepper, and allspice; bring to boil then simmer for 4-5 minutes.
  4. Stir in cornstarch slurry to thicken the glaze before pouring half over the chicken.
  5. Cover with foil and bake for 30 minutes.
  6. Increase temperature to 425°F, drizzle remaining glaze over chicken, and bake uncovered for another 15-20 minutes until golden brown.
  7. Let rest for ten minutes before serving.
