  • 6 ounces pitted dates (chopped)
  • 1 cup water
  • 1 teaspoon baking soda
  • 1¼ cups all-purpose flour
  • 4 tablespoons unsalted butter
  • ¾ cup granulated sugar
  • 2 eggs (at room temperature)
  • For the toffee sauce: 2 cups heavy cream
  • ½ cup dark brown sugar
  • 2½ tablespoons golden syrup (or molasses)
  • Pinch salt

Instructions

  1. Preheat oven to 350°F and butter an 8½-inch soufflé dish.
  2. In a medium saucepan, combine heavy cream, dark brown sugar, golden syrup, and salt over medium heat until melted into a thick sauce. Pour half into the prepared dish and freeze.
  3. In another saucepan, boil chopped dates with water; stir in baking soda and set aside.
  4. Whisk together flour, baking powder, and salt in a bowl.
  5. Beat butter and granulated sugar until fluffy; add eggs one at a time and mix in vanilla extract.
  6. Stir in half of the flour mixture followed by the date mixture; fold in remaining flour until just combined.
  7. Pour batter over reserved toffee sauce and bake for about 50 minutes or until a toothpick comes out with moist crumbs.
