  • 2 cups strawberries, sliced
  • 1 cup vanilla yogurt
  • 1 tablespoon honey
  • 2 eggs
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1/2 cup lemon juice
  • 1 cup sugar
  • 1/4 cup lemon zest (about 2 lemons)
  • 6 tablespoons unsalted butter, cubed
  • Pinch of coarse salt

Instructions

  1. Prepare the pie crust by mixing flour, salt, and sugar; add butter until crumbly. Stir in vanilla and cold water; roll out and fit into tart pans.
  2. Pre-bake crusts at 375°F (190°C) for 20 minutes until golden; cool.
  3. Whisk together yogurt, honey, eggs, sugar, and vanilla for custard; pour into cooled crusts.
  4. Bake filled tarts for 20 minutes until set; cool completely.
  5. Make lemon curd by whisking eggs with lemon juice and zest over medium heat until thickened; stir in butter until smooth.
  6. Once cooled, top tarts with lemon curd and garnish with strawberries.
