  • 1 cup Whole milk (warmed, 105°-110°)
  • 2 1/4 tsp Active dry yeast
  • 1/4 tsp Sugar (to activate the yeast)
  • 6 tbsp Unsalted butter (melted)
  • 2 large Eggs (room temperature)
  • 1/2 cup White granulated sugar
  • 4 cups All-purpose flour (spooned and leveled)
  • 1 tsp Salt
  • 2 cups Fresh strawberries (washed, hulled and sliced)
  • 1 tsp Fresh lemon juice
  • 1/3 cup White granulated sugar
  • 1 tbsp Water
  • 2 tbsp Cornstarch
  • 4 oz Cream cheese (softened)
  • 2 tbsp Butter (softened)
  • 1 cup Powdered sugar
  • Zest of 1 lemon
  • 2 tbsp Whole milk

Instructions

  1. Warm 1 cup of whole milk to 105°-110°F and mix with 2 1/4 tsp active dry yeast and 1/4 tsp sugar. Let sit until frothy.
  2. In a stand mixer, combine melted butter, 2 large eggs, and 1/2 cup sugar. Add the yeast mixture, then gradually mix in 4 cups flour and 1 tsp salt until smooth.
  3. Knead the dough until elastic. Place it in a greased bowl, cover with a towel, and let rise for about an hour until doubled.
  4. For the filling, mix 2 cups sliced strawberries with 1 tsp lemon juice and 1/3 cup sugar. Let sit for ten minutes.
  5. Roll out the dough into a rectangle, spread the strawberry filling, roll tightly, and cut into twelve pieces.
  6. Let the rolls rise again for thirty minutes in a greased baking dish.
  7. Bake at 350°F (175°C) for 25-30 minutes until golden brown.
  8. Prepare icing by whisking together softened cream cheese, butter, powdered sugar, lemon zest, and milk until smooth. Drizzle over warm rolls before serving.
