  • 2 cups fresh strawberries (hulled and sliced)
  • 2 1/2 cups all-purpose flour
  • 1 cup plus 2 tablespoons sugar
  • 4 tablespoons butter (melted and cooled)
  • 3/4 cup plain Greek yogurt
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a muffin pan by greasing it or lining it with paper cups.
  2. For the streusel topping, mix together sugar, brown sugar, flour, and melted butter in a small bowl until crumbly.
  3. In a saucepan over medium heat, combine sliced strawberries with sugar and cook until thickened (about 5 minutes). Set aside to cool.
  4. In a large mixing bowl, combine flour, baking powder, and salt.
  5. In another bowl, whisk together eggs and sugar until thickened; add melted butter, vegetable oil, yogurt, milk, and vanilla extract.
  6. Gently fold the wet ingredients into the dry ingredients until just combined; add in remaining strawberries carefully.
  7. Fill muffin cups with batter and add some of the cooled strawberry filling on top before sprinkling with streusel.
  8. Bake for about 17 minutes or until a toothpick inserted comes out clean.
