  • 6 bell peppers (2 green, 2 yellow, 2 red)
  • 1 lb lean ground beef
  • 1 cup chopped yellow onion
  • 1 cup white jasmine rice
  • 2 cups beef broth (or chicken broth)
  • 21 oz salsa (mild, medium, or hot)
  • 1 tsp taco seasoning
  • 1 tsp cumin
  • 1 cup shredded Mexican blend cheese (divided)

Instructions

  1. Preheat oven to 375°F.
  2. Slice tops off bell peppers and scoop out seeds. Rinse and pat dry.
  3. Place peppers in a baking dish, season with salt and pepper, drizzle olive oil, cover with foil, and bake for 25 minutes.
  4. In a skillet, sauté onions in oil until translucent. Add ground beef, cooking until browned.
  5. Stir in salsa, taco seasoning, cumin; mix thoroughly.
  6. Add uncooked rice and beef broth; simmer covered for 15 minutes until rice is cooked.
  7. Mix in half the cheese; stuff peppers with filling and top with remaining cheese.
  8. Bake uncovered for an additional 15-18 minutes until heated through.
