  • 2 medium butternut squash
  • 2 tablespoons olive oil
  • 6 oz fresh spinach
  • 8 oz cream cheese (or substitute with ricotta)
  • 1 cup shredded Parmesan cheese
  • Diced chicken (or chickpeas) as an alternative to bacon
  • Fresh thyme

Instructions

  1. Preheat your oven to 400°F (200°C). Slice each butternut squash in half lengthwise, scoop out the seeds, and drizzle with olive oil. Season with salt and pepper.
  2. Roast the squash halves cut-side down on a baking sheet for about 30 minutes until tender.
  3. In a pan, heat olive oil over medium heat. Add fresh spinach and sauté until wilted (about 2-3 minutes). Remove from heat.
  4. In a bowl, mix the sautéed spinach with cream cheese, Parmesan cheese, and diced chicken or chickpeas if using. Stir in fresh thyme.
  5. Flip the roasted squash halves over and fill them generously with the cheesy mixture.
  6. Return the stuffed squash to the oven for an additional 20-30 minutes until heated through and golden on top.
