  • 10 oz cherry tomatoes (halved)
  • 8.5 oz sun-dried tomatoes in oil (drained)
  • 1/2 red onion (diced)
  • 8 oz mozzarella pearls
  • ⅓ cup extra virgin olive oil
  • ⅓ cup oil drained from sun-dried tomatoes
  • 2 T balsamic vinegar
  • 2 garlic cloves (minced)
  • 1 tsp Italian seasoning
  • ½ tsp Pepper
  • ½ tsp Salt

Instructions

  1. Cook pasta al dente according to package instructions. Drain and toss with warm pasta and baby spinach.
  2. In a large bowl, combine the cooled pasta with basil, red onion, sun-dried tomatoes, cherry tomatoes, and mozzarella.
  3. Whisk together olive oil, vinegar, minced garlic, Italian seasoning, salt, and pepper in a separate bowl; drizzle over the salad.
  4. Chill for at least 30 minutes before serving. Toss with remaining dressing if needed.
