  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (23 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, cream together room temperature butter and powdered sugar until light and fluffy. Gradually add flour until well combined. Press mixture into an 8" x 8" baking pan and bake for 15 minutes until lightly golden.
  2. While the crust is baking, whisk eggs and granulated sugar together in another bowl. Add fresh lemon juice and zest, then sift in remaining flour and mix gently until smooth.
  3. Pour lemon filling over the warm crust and return to the oven. Bake for an additional 30-35 minutes until set but slightly jiggly in the center.
  4. Allow to cool completely at room temperature before slicing into squares. Dust with powdered sugar just before serving.
