  • 4 large sweet potatoes
  • ½ cup unsalted butter
  • 1 cup brown sugar
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 10 oz mini vegan marshmallows
  • 1¼ cups finely chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop sweet potatoes into large chunks. Boil in water until fork-tender, then drain.
  3. Mash the sweet potatoes in a saucepan and mix in melted butter, brown sugar, salt, cinnamon, vanilla extract, and nutmeg.
  4. In a separate bowl, combine melted butter, brown sugar, flour, salt, and chopped pecans for the topping.
