  • 11/2 teaspoons garlic powder

  • 1 cup uncooked quinoa
  • 5 cups fresh baby spinach
  • 1 large avocado
  • 1/3 cup dried sweetened cranberries
  • 1/4 cup thinly sliced fresh basil (optional)
  • 1 large lemon
  • 4 tablespoons apple cider vinegar
  • 11/2 tablespoons Dijon-style mustard
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 1/2 cup olive oil

Instructions

  1. Preheat oven to 425°F. Toss chopped sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper on a baking sheet. Roast for about 30 minutes until tender.
  2. Cook quinoa according to package instructions; let cool.
  3. For the dressing, mix lemon juice, apple cider vinegar, mustard, honey, minced garlic, olive oil, salt, and pepper in a jar.
  4. In a large bowl, combine cooled quinoa and spinach. Add roasted sweet potatoes, avocado chunks, cranberries, and dressing just before serving.
