  • 1 red bell pepper
  • 1 carrot
  • 2 tablespoons vegetable oil
  • 1 teaspoon minced garlic
  • 1 cup cooked brown rice or quinoa
  • For the peanut sauce: creamy peanut butter, soy sauce, lime juice, honey or maple syrup, sriracha
