  • 1 cup quinoa
  • 2 cups water
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • 1 cup green onions, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and combine with water in a medium saucepan. Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes until fluffy. Remove from heat and let cool.
  2. In a large bowl, mix cooled quinoa with diced red bell pepper, cucumber, shredded carrots, sliced green onions, cilantro, chopped peanuts, and sesame seeds.
  3. In a small bowl, whisk together soy sauce, lime juice, honey, sesame oil, ginger, garlic, salt, and pepper.
  4. Pour dressing over the salad mixture and toss gently to coat all ingredients evenly.
  5. Chill in the refrigerator for at least 30 minutes before serving.
