  • 500 g butternut squash
  • 4 cloves garlic
  • 1 yellow onion
  • 500 g shelf-stable gnocchi
  • 50 g parmesan cheese
  • 30 g walnuts
  • 1 ball fresh mozzarella
  • 50 g pancetta or prosciutto

Instructions

  1. Preheat the oven to 180ºC.
  2. On a baking tray, combine chopped butternut squash, sliced onion, and garlic. Drizzle with olive oil and sprinkle with rosemary.
  3. Roast for 30 minutes until tender and golden.
  4. Blend the roasted vegetables into a smooth purée, adding water if necessary.
  5. In a frying pan, cook pancetta until crispy, then set aside.
  6. In the same pan, combine purée, milk, and gnocchi; simmer for about 8-10 minutes until cooked through.
  7. Stir in parmesan and lemon juice; top with mozzarella and grill until melted.
  8. Garnish with remaining pancetta, walnuts, black pepper, and fresh parsley before serving.
