  • 2 cups grated carrots
  • 1 cup shredded sweetened coconut

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, blend applesauce, sugar, and eggs until well mixed.
  3. Add flour, baking soda, baking powder, salt, cinnamon, carrots, coconut, and optional nuts. Mix until just combined.
  4. Stir in vanilla and crushed pineapple.
  5. Pour batter into greased baking pans (9 x 13 inch or two round pans).
  6. Bake for 35–40 minutes for a larger pan or 25–30 minutes for smaller pans until a toothpick comes out clean.
