  • ½ cup dark molasses

  • 2 teaspoons baking soda
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • 1 tablespoon Dutch processed cocoa
  • ¾ cup butter, softened
  • 2/3 cup brown sugar, packed
  • 8 ounces dark chocolate
  • ½ cup granulated sugar

Instructions

  1. Prepare the candied ginger mixture by processing it with flour and salt until fine.
  2. In a bowl, combine egg yolks, molasses, vanilla, and fresh ginger; mix in the candied ginger mixture.
  3. Whisk together the remaining flour, baking soda, ground ginger, cocoa powder, and spices.
  4. Cream butter and brown sugar in a stand mixer until light; add the wet mixture.
  5. Slowly mix in the dry ingredients until just combined; fold in chopped dark chocolate.
  6. Form dough into logs using plastic wrap; refrigerate for at least four hours.
  7. Slice dough into rounds, roll in sugar, freeze briefly, then bake at 350°F for about 11–12 minutes.
