  • 4 salmon fillets
  • 2 tbsp. extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 3 tbsp. butter
  • 3 cloves garlic, minced
  • 1 1/2 c. halved cherry tomatoes
  • 2 c. baby spinach
  • 1/2 c. heavy cream
  • 1/4 c. freshly grated Parmesan
  • 1/4 c. chopped herbs, plus more for garnish
  • Lemon wedges, for serving

Instructions

  1. In a skillet over medium-high heat, heat olive oil until shimmering. Season salmon fillets with salt and pepper, then add to the skillet skin-side down. Cook for about 6 minutes until golden brown, then flip and cook for an additional 2 minutes before removing from the skillet.
  2. Lower heat to medium and add butter to the same skillet. Once melted, stir in minced garlic and cook until fragrant (about 1 minute). Add halved cherry tomatoes, season with salt and pepper, and cook until they begin to burst.
  3. Toss in baby spinach until wilted, then stir in heavy cream, grated Parmesan cheese, and chopped herbs. Simmer gently until thickened (approximately 3 minutes).
  4. Return salmon to the skillet and spoon sauce over it. Simmer for another 3 minutes until fully cooked through.
  5. Garnish with additional herbs and serve with lemon wedges if desired.
