  • ½ cup dry breadcrumbs
  • ¼ cup milk
  • 1 egg
  • ¼ cup sun-dried tomatoes
  • 2½ cups low sodium chicken broth
  • 1½ cups dry orzo pasta
  • ⅔ cup cream
  • 1 cup chopped fresh spinach

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, milk, egg, Italian seasoning, salt, garlic, onion powder, black pepper, and parsley until just mixed.
  2. Heat oil in a skillet over medium heat. Form small meatballs (about 1 inch) from the mixture and brown them in the skillet until golden on all sides.
  3. Remove meatballs and sauté sun-dried tomatoes and minced garlic in the same pan for one minute before adding tomato paste.
