  • 4 pieces salmon fillet
  • Salt and pepper

  • 34 sun-dried tomatoes (sliced)
  • 125ml grape juice
  • 250ml heavy cream
  • 50g Parmesan cheese (grated)
  • 30g fresh spinach

  1. Sear the salmon: Pat fillets dry, season with salt and pepper. Heat butter and olive oil in a frying pan over medium-high heat. Cook salmon skin-side up for 6-7 minutes until golden. Remove from pan and set aside.

  3. Make it creamy: Stir in heavy cream and grated Parmesan cheese until smooth. Add fresh spinach and simmer for an additional 5 minutes.
