  • 14 oz (400g) softened butter
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp almond extract
  • Zest of 1 orange (optional)
  • 6 cups plain flour
  • 6 tbsp meringue powder (or pasteurized egg whites)
  • 8 tbsp water
  • 2 tsp lemon juice
  • 7 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together softened butter and sugar in a large bowl until fluffy.
  3. Mix in eggs one at a time along with vanilla extract, almond extract, and optional orange zest until smooth.
  4. Gradually add flour until a dough forms—add milk if it's too dry.
  5. Roll out dough on a floured surface to about ¼-inch thickness; cut into desired shapes.
  6. Chill cut-out cookies for 10–15 minutes before baking.
  7. Bake for 10–12 minutes until edges are golden; cool completely before icing.
  8. For icing, whisk meringue powder, lemon juice, and water; gradually mix in powdered sugar until glossy.
  9. Decorate cookies with colored icing and toppings of choice.
