  • 3 parsnips, peeled and sliced
  • 3 celery ribs, sliced
  • ½ medium onion, diced
  • 1 leek, halved lengthwise and sliced
  • 4 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 boneless skinless chicken breasts
  • 2 sprigs fresh thyme
  • 2 sprigs fresh tarragon
  • 1 bay leaf
  • 5 cups low-sodium chicken broth
  • ¼ cup fresh parsley, roughly chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add carrots, parsnips, celery, leek, and onion; sauté for 4 to 5 minutes until softened. Stir in garlic, salt, and pepper; cook for another minute.
  2. Add herbs and chicken breasts to the pot; pour in the chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until the chicken is cooked through.
  3. Remove the chicken; shred it using two forks. Return the shredded chicken to the pot and simmer for an additional minute.
  4. Discard herbs before serving. Stir in fresh parsley for added flavor.
