  • 1/4 cup plain unsweetened applesauce
  • 2 tablespoons cornstarch
  • 2 cups all-purpose flour
  • 1/2 cup oat flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1/2 cup cold water
  • 1 egg plus 2 tablespoons water for egg wash
  • 12/3 cups powdered sugar
  • 2 to 4 teaspoons milk
  • Neon violet and sky blue food gel color

Instructions

  1. Prepare the wildberry filling by mixing all berries with lemon juice, sugar, pears, applesauce, and cornstarch. Set aside.
  2. For the dough, whisk together flours, sugar, and salt; cut in cold butter until crumbly. Gradually add cold water until it forms a dough.
  3. Roll out the dough and cut into rectangles. Fill each with wildberry filling and seal with egg wash.
  4. Bake at 375°F (190°C) for about 25 minutes until golden brown.
  5. Cool and decorate with icing made from powdered sugar mixed with milk.
