  • 1 lb salmon fillet (no skin)
  • 12 baby potatoes (scrubbed)
  • 2 cups grape tomatoes (halved)
  • 6 oz broccoli florets
  • 3 tbsp fresh minced garlic
  • 2 tsp za'atar spice
  • Quality extra virgin olive oil
  • Salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine baby potatoes, grape tomatoes, and broccoli florets. Drizzle with olive oil, season with salt, pepper, minced garlic, and za'atar; toss well.
  3. Spread the vegetables on a baking sheet. Pat the salmon dry, season with salt and pepper, drizzle with olive oil, and top with remaining garlic and spices.
  4. Place salmon on the same baking sheet as vegetables. Bake for 15-16 minutes until cooked through.
