  • 1 tablespoon butter
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 34 small russet potatoes (about 1 lb.)
  • 3 cups kale (roughly chopped)
  • 1 teaspoon hot sauce
  • 1 teaspoon soy sauce
  • 3 tablespoons flour
  • 1 teaspoon mustard powder
  • 1 teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 1 pinch of red pepper flakes (optional)

Instructions

  1. In a large pot over medium heat, cook the ground chicken sausage until browned, about 10 minutes. Reserve 1 tablespoon of drippings and set aside the sausage.
  2. In the same pot, add reserved drippings and butter. Sauté diced onions for about 5 minutes until softened. Then incorporate minced garlic, hot sauce, and soy sauce.
  3. Sprinkle in flour and stir continuously for about 2 minutes until well combined.
  4. Gradually pour in chicken broth while stirring to prevent lumps. Bring to a boil then reduce to simmer.
  5. Add potato slices and cooked chicken sausage back into the pot; simmer for about 10 minutes until potatoes are nearly fork-tender.
  6. Stir in chopped kale and let simmer for an additional 5 minutes before serving.
