  • 1 cup cherry tomatoes (quartered)
  • ¼ cup green pepper (chopped)
  • ¼ cup red onion (chopped)
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons kalamata olives (pitted)
  • 1 garlic clove (pressed)
  • Olive oil, salt, oregano, and crushed red pepper for seasoning
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the salmon dry with paper towels.
  2. In an oven-safe dish, mix cherry tomatoes, green peppers, red onions, feta cheese, olives, and garlic. Season with half the salt and oregano; drizzle with olive oil and toss well.
  3. Place the salmon in the center of the vegetable mix. Sprinkle with remaining oregano and crushed red pepper; drizzle with more olive oil if desired.
  4. Bake for about 15 minutes until the salmon is opaque and vegetables are softened.
