  • 3/4 cup Milk (warmed to 110℉)
  • 2 1/4 tsp Active dry yeast
  • 1 Large egg (room temperature)
  • 2/3 cup Mashed bananas (about 2 bananas)
  • 5 1/4 cup All-purpose flour
  • 1 tsp Salt
  • 1/4 cup White granulated sugar
  • 10 TBSP Unsalted butter (cubed and softened)
  • 3/4 cup Brown sugar (for the filling)
  • 1 TBSP Ground cinnamon (for the filling)
  • 2 Bananas (sliced thinly, for the filling)
  • 4 oz Cream cheese (for the icing)
  • 4 TBSP Unsalted butter (for the icing)
  • 1 cup Powdered sugar (for the icing)
  • 1 tsp Pure vanilla extract (for the icing)

Instructions

  1. Warm milk to about 110℉ and sprinkle yeast over it; let sit until foamy.
  2. In a bowl or stand mixer, mix mashed bananas, beaten egg, salt, sugar, and softened butter. Add yeast mixture once foamy and gradually mix in flour until dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth. Let rise in a greased bowl for about an hour.
  4. Roll out dough into a rectangle, spread softened butter on top, then sprinkle with cinnamon-sugar and sliced bananas.
  5. Roll tightly into a log shape and cut into 12 equal pieces.
  6. Preheat oven to 350℉ and place rolls on a lined baking sheet; allow them to rise for another 30 minutes before baking for about 25-30 minutes.
  7. For icing, beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla until creamy.
  8. Drizzle icing over baked rolls before serving.
