  • Egg white

Instructions

  1. Preheat oven to 425°F (220°C). Roll out half of the pie dough and fit it into a 9-inch pie plate.
  2. In a large pot, combine sliced apples with sugars, lemon zest, salt, and cinnamon. Cook over medium heat for 10-12 minutes until tender but not mushy.
  3. Cool the apple mixture on a baking sheet for 30 minutes before draining excess juice.
  4. Assemble the pie by filling the crust with cooled apples and drizzling with reserved lemon juice.
  5. Cover with top crust, venting steam with slits, and brush with beaten egg white.
