  • 1 tablespoon espresso powder
  • ¾ cup (165 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • ½ tablespoon vanilla extract
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup (175 g) all-purpose flour
  • ½ cup (80 g) Heath toffee bits with chocolate
  • Flaked sea salt for topping

Instructions

  1. Brown the butter in a medium saucepan over medium heat until golden brown and nutty. Stir constantly, then let cool.
  2. In a stand mixer, combine the cooled browned butter and sugars. Beat on medium-high speed until light and fluffy (3-4 minutes).
  3. Add the egg and vanilla extract, mixing until smooth.
  4. Gradually incorporate baking powder, baking soda, salt, and flour until just combined.
  5. Gently fold in toffee bits until evenly distributed.
  6. Chill the dough for at least 2 hours.
  7. Preheat the oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets, sprinkle with sea salt, and bake for 11-13 minutes.
  8. Let cool slightly before transferring to wire racks.
