  • 2 cups cherry tomatoes
  • ⅓ cup olive oil
  • 3 garlic cloves, thinly sliced
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 slices artisan bread
  • 8 ounces burrata cheese
  • 1 cup fresh basil leaves
  • 4 tablespoons balsamic glaze
  • Olive oil or softened butter, for toasting
  • 4 slices prosciutto
  • 1 cup arugula
  • 2 tablespoons pesto

Instructions

  1. Preheat oven to 375°F (190°C). In a mixing bowl, combine halved cherry tomatoes with olive oil, garlic, oregano, red pepper flakes, salt, and pepper. Toss well.
  2. Spread the mixture on a baking sheet and roast for about 30 minutes until softened.
  3. While tomatoes roast, heat a skillet over medium heat. Brush one side of each slice of bread with olive oil or butter and toast until golden.
  4. Assemble sandwiches: Layer basil leaves on half the toasted bread, add burrata cheese, prosciutto (if using), arugula (if using), and top with roasted tomato confit and balsamic glaze. Close with another slice of bread.
  5. Serve immediately while warm.
