  • 45 lbs salmon (whole side)
  • 1 cup brown sugar
  • ¼ cup kosher salt
  • ¾ cup maple syrup
  • ¼ cup honey

Instructions

  1. Slice the salmon into 1-inch cubes.
  2. In a large bowl, combine brown sugar, kosher salt, maple syrup, honey, and 2 cups of water. Add the salmon cubes and coat well. Cover and refrigerate for at least 3 hours or overnight.
  3. Preheat smoker to 180°F. Line smoker grates with aluminum foil.
  4. Place marinated salmon cubes on the foil, spaced apart, and save leftover marinade.
  5. Add wood chips to the smoker and smoke for about 1 hour.
  6. Simmer remaining marinade in a saucepan until reduced into a glaze (about 10 minutes).
  7. After an hour, flip salmon cubes and brush with glaze. Smoke for an additional 4-5 hours, glazing every 45 minutes.
  8. Check doneness at an internal temperature of at least 160°F.
