  • 2 1/4 teaspoons instant yeast
  • 2 large eggs
  • 1/2 cup salted butter (melted)
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 1 1/2 cups finely shredded carrot
  • 3/4 cup shredded coconut
  • 4 1/2 cups bread flour (divided)
  • Cream cheese frosting ingredients

Instructions

  1. In a stand mixer bowl, mix warm milk and yeast. Add eggs, melted butter, salt, cinnamon, sugar, carrots, and coconut.
  2. Incorporate flour until just combined; rest for 5 minutes.
  3. Knead dough with a dough hook for 5–7 minutes until smooth.
  4. Let rise in a greased bowl for about 30 minutes until doubled.
  5. Prepare cinnamon filling and roll out dough into a rectangle. Spread filling evenly and roll tightly; slice into rolls.
  6. Place rolls in a greased pan and let rise for another 20 minutes.
  7. Preheat oven to 350°F (175°C) and pour heavy cream over risen rolls before baking for 27–30 minutes.
  8. While cooling, prepare cream cheese frosting and spread over rolls once slightly cooled.
