  • 1 (15-oz.) can chickpeas
  • 1/2 cup plain breadcrumbs (or almond meal for gluten-free)
  • 2 large eggs (or flax eggs for vegan)
  • 1/4 cup fresh parsley leaves
  • 2 Tbsp nutritional yeast (or grated Parmesan cheese)
  • 2 tsp Italian seasoning
  • 2 tsp black pepper
  • 1 tsp garlic powder
  • 3/4 tsp smoked paprika
  • 3/4 tsp kosher salt
  • 2 Tbsp extra-virgin olive oil

Instructions

  1. In a food processor, combine chickpeas, breadcrumbs, eggs, parsley, nutritional yeast, Italian seasoning, black pepper, garlic powder, smoked paprika, and salt. Blend until mostly smooth.
  2. Scoop about one tablespoon of the mixture and roll into balls; you should yield approximately 14 meatballs. Adjust with more breadcrumbs if needed.
  3. Heat olive oil in a large skillet over medium heat. Cook the meatballs for 6 to 8 minutes until golden brown on all sides.
  4. Serve your delicious chickpea meatballs with pasta sauce, in sandwiches, or atop salads.
