  • 34 pounds corned beef brisket (with seasoning packet)
  • 1 medium head green cabbage, chopped
  • 4 large carrots, peeled and cut into chunks
  • 1.5 pounds Yukon Gold or red potatoes (optional), cut into chunks
  • 1 large yellow onion, quartered
  • 3 cloves garlic, smashed
  • 4 cups beef broth
  • 2 tablespoons apple cider vinegar

Instructions

  1. Chop carrots and potatoes; quarter onion and chop cabbage.
  2. Rinse the brisket under cold water and pat dry.
  3. Layer onions, carrots, and potatoes in the slow cooker; place the brisket on top.
  4. Pour in beef broth and apple cider vinegar; sprinkle pickling spices over brisket along with smashed garlic.
  5. Cover and cook on low for 6-8 hours without lifting the lid during the first 4 hours.
  6. About 30 minutes before serving, add chopped cabbage on top; continue cooking until tender.
  7. Remove brisket, let rest for 10 minutes before slicing against the grain.
