  • 1/4 cup green onions (chopped)
  • 1 jalapeño (finely diced)
  • 1/2 cup Ranch dressing
  • 1 1/2 cups mayonnaise
  • 1/2 cup sour cream
  • Juice of 1 lime
  • 1 cup cheddar cheese (shredded)
  • 1 teaspoon garlic powder
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)
  • 1/4 teaspoon onion powder
  • 2 cloves garlic (minced)
  • 2 tablespoons lemon juice
  • 1 teaspoon fresh dill

Instructions

  1. Prepare fresh corn by removing kernels from the cob or thaw frozen corn and drain excess moisture.
  2. Cook bacon until crispy; once cool, chop into small pieces.
  3. In a large mixing bowl, combine corn, bacon, green onions, jalapeño, Ranch dressing, mayonnaise, sour cream, lime juice, garlic powder, onion powder, minced garlic, salt and pepper.
  4. Mix thoroughly using a whisk until well blended; adjust seasoning as needed.
  5. Gently fold in shredded cheddar cheese.
  6. Chill for at least 30 minutes before serving to enhance flavors.
