  • 250 g pasta
  • 30 g unsalted butter
  • 1 large shallot, finely chopped
  • 75 ml dry white wine
  • 200 ml crème fraîche
  • Juice of one lemon
  • 150 g frozen peas
  • 180 g hot smoked salmon, flaked
  • 2 tablespoons fresh dill
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted boiling water. Reserve a cup of the pasta water before draining.
  2. Blanch frozen peas in boiling water for 1 minute, then cool in ice-cold water.
  3. In a large pan, melt butter over medium heat and sauté shallots until soft. Add white wine and cook until the alcohol evaporates.
  4. Stir in crème fraîche and lemon juice until combined.
  5. Toss cooked pasta with the sauce; add reserved pasta water as needed for desired consistency.
  6. Gently fold in blanched peas, hot smoked salmon, and dill. Season with salt and pepper.
  7. Serve immediately.
