  • 3/4 cup extra-virgin olive oil
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1 cup cilantro (finely chopped)
  • 8 garlic cloves (minced)
  • 3 & 1/2 pounds boneless pork shoulder
  • Kosher salt and pepper
  • Ground cumin
  • Oregano

Instructions

  1. Prepare the marinade by combining olive oil, orange juice, lime juice, chopped cilantro, minced garlic, oregano, and cumin in a ziplock bag. Seal tightly and shake to mix.
  2. Add the Beef shoulder to the marinade and refrigerate for at least 4 hours or overnight.
  3. Preheat oven to 425°F (220°C). Place Beef on a wire rack over a baking sheet.
  4. Roast for 30 minutes. Then reduce temperature to 375°F (190°C) and continue roasting for an additional 1 hour and 20-30 minutes until internal temperature reaches 160°F (71°C).
  5. Let the Beef rest for 20 minutes before slicing against the grain.
