  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Juice
  • 3 large Eggs
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese
  • 1/2 cup Granulated Sugar
  • 8 oz Cool Whip
  • Sweetened Coconut Flakes for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the Strawberry Cake Mix, Guava Nectar, Eggs, and melted Coconut Oil until smooth.
  3. Pour batter into a greased 9×13 inch baking pan and bake for about 25 minutes until a toothpick comes out clean. Let cool completely.
  4. In another bowl, beat Cream Cheese with Granulated Sugar and Vanilla. Fold in Cool Whip and spread over cooled cake.
  5. For the glaze, combine remaining Guava Nectar, Granulated Sugar, and cornstarch in a saucepan over medium heat until thickened. Pour over the cream cheese layer.
  6. Garnish with sweetened Coconut Flakes before serving.
