  • 1/3 cup butter
  • 5.3 ounces white chocolate
  • 1.5 teaspoon neutral tasting vegetable oil (optional)
  • 5.3 ounces natural pistachio butter
  • 1 pinch of salt
  • 14.1 ounces dark chocolate (55-65% cocoa, melted and tempered)
  • 3 tablespoons chopped pistachios (for decoration)

Instructions

  1. Chop the kataifi pastry into smaller pieces and fluff to separate threads.
  2. Toast the kataifi with butter in a pot over medium heat until golden brown and crispy; let cool.
  3. Melt white chocolate in a heatproof bowl, then mix in pistachio butter and salt; allow to cool.
  4. Combine the cooled toasted kataifi with the pistachio mixture until well blended; refrigerate if too runny.
  5. Form into 16 small balls and freeze until firm.
  6. Dip each ball in melted dark chocolate using forks, sprinkle with chopped pistachios, and let set on parchment paper.
