Easy Fried Rice is a delightful dish that comes together in just 20 minutes, making it a perfect meal for busy weeknights or gatherings.

  • 4 cups cooked rice (long or short grain)
  • 2 tablespoons butter
  • 2 large eggs (whisked)
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 12 teaspoons minced garlic
  • 3 tablespoons lite soy sauce
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Chill the cooked rice in the refrigerator until ready to use.
  2. In a large skillet or wok, melt the butter over medium heat. Add chopped onion and carrots; cook for about 2 minutes. Stir in minced garlic and frozen peas.
  3. Push the vegetables to one side of the skillet; pour whisked eggs into the empty side and scramble until fully cooked. Mix everything together.
  4. Gently stir in chilled rice, ensuring even distribution of ingredients.
  5. Add soy sauce and sesame oil to taste; toss until well coated. Finish with salt and pepper as needed.
  6. Serve warm as a main dish or side.
