  • 450 g chicken breast, diced
  • 1 medium onion, diced
  • 1 red pepper, sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 200 ml chicken stock
  • 400 ml coconut milk
  • 1 large mango, diced
  • Fresh coriander for garnish

Instructions

  1. Heat olive oil and butter in a large deep pan over medium heat. Add the chicken and cook until golden brown (4-5 minutes). Remove and set aside.
  2. In the same pan, sauté onion and red pepper for 2-3 minutes until softened.
  3. Stir in garlic and ginger; cook for another minute until fragrant. Add curry powder, chicken stock, and kaffir lime leaves.
  4. Return the chicken to the pan and stir in coconut milk and diced mango. Simmer for about 10 minutes until thickened.
  5. Serve over basmati or cauliflower rice, garnished with fresh coriander.
