  • 5 tablespoons olive oil (2 for sautéing, 3 for dressing)
  • Salt and pepper (to taste)
  • 1 tablespoon rice vinegar
  • 1½ teaspoons low sodium soy sauce
  • 1 teaspoon Dijon mustard
  • 1 large clove garlic (minced)
  • 2 tablespoons freshly grated Parmesan
  • 4 strips cooked bacon (chopped)
  • 3 tablespoons chopped chives

Instructions

  1. Preheat your oven to 425°F.
  2. Slice the cabbage head in half, remove the stem, and cut into 1-inch pieces.
  3. Place the cabbage on a baking sheet, drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss to coat evenly.
  4. Spread the cabbage out on the baking sheet and roast for 20-25 minutes until golden brown and tender.
