  • 1 pound ground turkey
  • 1 small sweet onion, finely diced
  • 1 cup shredded carrots
  • 3 garlic cloves, minced
  • 1 small head cabbage, shredded (about 8 cups)
  • 3 tablespoons soy sauce or Tamari
  • 2 tablespoons olive oil
  • Cooked white rice (optional)
  • Green onions and toasted sesame seeds for garnish

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add ground turkey and cook until almost done (5–6 minutes).
  2. Push turkey to one side and add remaining olive oil and sweet onion. Sauté for about 3–4 minutes.
  3. Stir in carrots, garlic, and ginger; cook for another 2 minutes.
  4. Pour in chicken broth and scrap any brown bits from the pan.
  5. Add cabbage, soy sauce or Tamari, salt, and pepper. Mix well and cover with a lid. Cook on medium-low for 12–15 minutes until cabbage is tender.
  6. Serve over cooked rice if desired, garnished with green onions and sesame seeds.
