  • 1 large spaghetti squash
  • 1 8-ounce block feta cheese
  • 1 cup cherry tomatoes, halved
  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Place cut side up on the prepared baking sheet.
  3. Break the feta in half and place each piece in the center of each squash half. Add halved tomatoes around the feta, drizzle with olive oil, and season with garlic, salt, and pepper.
  4. Bake for 45-50 minutes until the squash is fork-tender and the feta is golden brown.
  5. Use a fork to shred the squash into strands and mix everything together. Top with fresh basil before serving.
