  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup oil (olive, vegetable, or melted coconut)
  • 2/3 cup granulated sugar, plus 1 tablespoon for peaches
  • 2 large eggs
  • 3/4 cup plain Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 2 cups sliced fresh peaches

Instructions

  1. Preheat your oven to 350°F (177°C). Grease a 9-inch springform pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix oil, sugar, eggs, Greek yogurt, extracts, lemon juice, and zest until combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Toss peach slices with the extra sugar (and cinnamon if desired). Layer half the batter in the pan, add half the peaches, then top with remaining batter and peaches.
  6. Bake for 50–55 minutes or until a toothpick comes out clean. Cool on a wire rack for at least 30 minutes before serving.
