  • 12 ounces fusilli or penne pasta
  • 1 bunch asparagus (about 1 pound), trimmed and cut into 1.5-inch pieces
  • 1 cup fresh or thawed peas
  • 1/4 cup finely diced red onion (optional)
  • 2 tablespoons chopped fresh dill
  • 3 tablespoons fresh lemon juice (from about 1 large lemon)
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente (9–11 minutes).
  2. Add asparagus for the last 3 minutes of cooking.
  3. Drain and rinse under cold water to stop cooking.
  4. In a jar, whisk together dressing ingredients until emulsified.
  5. Toss cooled pasta and asparagus with peas, red onion, and dill.
  6. Pour dressing over salad and toss to combine.
  7. Let sit for at least 10 minutes before serving.
